A Nice Salad

Why do people always say they’re going to make a nice salad. Is there such a thing as a mean salad?  I have never heard anyone say “I’m going to make a nice rice.” Why not?  It even rhymes for cripes sake.

Anyway, our nice salad is nice because it pairs nice sweet mandarin oranges with nice salty parmesan cheese shavings all over a nice bed of peppery arugula.  Nice.

Need This
1 – 15 ounce can of nice mandarin oranges
1 cup of nicely chopped walnuts
1 nice small red onion
1 nice small Parmesan cheese wedge (whole, not grated)
Some nice baby Arugula (also known as Rocket), about 12 ounces

Do This
Slice the red onion into nice thin strips.

Dunk the arugula into a large bowl filled with clean cold water, then remove by hand onto paper towels.  If there is a lot of sand in the bottom of the bowl of water, that’s not nice. Throw off the sandy water, refill the bowl and dunk the arugula in again.  Repeat this process until there is no more sand at the bottom of the bowl. Nice.

Now pat the arugula with the paper towels so it dries off nice.

In a large salad bowl add the arugula in first, then the red onion, then the walnuts, then the mandarin oranges.

Using a vegetable peeler, shave off nice thin slices of parmesan cheese all over the top.

Serve with your favorite salad dressing*

Serves 4.  My cost approx. $ 6.84 total about $ 1.71 per serving.

*A nice raspberry vinaigrette is excellent with this.  A balsamic vinaigrette is nice too. GMN
