Best Egg Sandwich Ever

Crispy bacon, fried eggs, butter, cheese, salt. Keep this one a secret from your doctor.

Now we have never claimed that povertystew is a healthy-eating cookbook nor do we claim that it is diet conscious. But hey, where else are you going to go to find a good recipe for shit-on-a-shingle?*

We used a sweet brioche roll for this which was incredibly delicious but any kind of bread will do.

Make this sandwich for breakfast along with a good cup of Eight o’clock coffee. You won’t be sorry.

Need This
4 large eggs
8 strips of bacon
butter
4 slices of yellow cheese (Yellow American, Cheddar, Cheddar Jack, etc.)
4 brioche rolls (or any bread of choice)
Maple flavored syrup
Salt
Ground black pepper (or cayenne)

Do This
Fry the 8 strips of bacon in a frypan until crispy.

While the bacon is cooking slice the brioche rolls in half lengthwise.

Melt 1/4 stick (2 tablespoons) of butter in a large frypan or skillet with a medium heat under it.

Put the sliced brioche rolls into the melted butter – cut side down. Toast the rolls in the butter under medium heat until the cut sides are tan in color.

Turn off the heat and remove the toasted rolls to the serving plates.

When the bacon is ready transfer the strips to a plate lined with a paper towel and layer a sheet of paper towel over the top as well.

Add more butter to the frypan and put the heat back under it.

Crack the four eggs into the buttered pan. When the whites begin to set, gently break the yolks with the tines of a fork.

Cook the eggs until firm, turning them over once so that they cook on both sides. Layer the bacon strips over the eggs then layer the cheese over the bacon so that it glues down the bacon.

Turn off the heat.

Cover the pan and let the cheese melt over the eggs (about 5 minutes).

While the cheese is melting grab the 4 roll tops and drizzle a generous film of maple syrup over the toasted cut side of each.

Remove the bacon, egg and melted cheese discs from the frypan and set them onto the toasted roll bottoms.

Cover with the maple syrup sopped bun tops.

Press the sandwich down gently and serve with salt and pepper on the side.
