If you know who Arnold Ziffel is, you’ll get the gruesome humor of the recipe title.  If you don’t know who Arnold Ziffel is, then you won’t.

This recipe is a spin on the classic Sloppy Joe, using pork rather than beef.  We here in the Stew slow cook a pork loin all day in a crock pot, until it shreds, but you can use ground pork quick-fried on a stovetop if you don’t have a crock or don’t have the patience to wait all day to make it.

Both Hunt’s and Del Monte brand make a good canned sloppy joe sauce and both claim to be the “original” so get the cheaper of the two.

A soft onion roll is the best vehicle for this sandwich. King’s Hawaiian works great too – if you can find it.  A hamburger or Kaiser roll is fine if you can’t get either of the above.

Need This
Boneless pork loin – about 2 pounds
1 large green pepper – chopped
1 medium size onion – chopped
1 can sloppy joe sauce (Hunt’s or Del Monte brand)
2 cans of cold cheap beer (Pabst, Rheingold, Miller etc.)
Salt
Ground black pepper

Do This
Hiss a little non-stick cooking spray into the crock of a slow-cooker (crock pot), then set the pork loin in there.

Open one of the cans of beer.  Take a sip to make sure it’s good.  Better take another sip for a follow-up analysis. Perhaps another sip just to be sure. Ahhh what the hell… keep sipping at it – you only need one can of beer to cook with anyway.

Open the 2nd can of beer and pour the entire contents over top of the pork loin.  Season with salt and ground black pepper to taste.

Cover and set the crock to high heat.

Cook the beer-soaked pork on high heat for at least 4 hours.  Do not remove the cover during this cooking time.*

After 4 hours scratch the pork loin with the tines of a fork.  If it shreds, it’s done.  If it does not shred, put the cover back on and cook for another hour.

Spray a little non-stick cooking spray into a large fry pan with sides and put a high heat under it.

Add the chopped green pepper and onion to the pan and fry them, stirring occasionally, until they just start to brown (about 10 minutes).

Shred the pork loin with two forks (or you fingers) and add it to the pan with the peppers and onions.

Throw in the can of Sloppy Joe sauce and mix well, then reduce the heat to low.  Simmer on low for about 10 minutes, stirring frequently.

Serve hot.

Serves 4:  My cost approx. $ 7.50  total – about $ 1.88  per serving (sans the bread).

*Or you can simply fry up some already ground pork in a little vegetable oil until browned; throw off any excess fat and go from there.  GMN
